Caramelized Banana Split

Ingredients:

  • 1 banana
  • 2oz sugar
  • 3 scoops vanilla ice cream
  • 1oz caramel sauce
  • 1oz chocolate sauce
  • 1oz raspberry sauce
  • 2oz whipped cream
  • 1oz chopped hazelnuts
  • strawberries
  • maraschino cherry
  • almond lace cookie shell(see recipe)
  • gas-torch or oven broiler can be used (450 degrees)  

Directions:

  1. Using the caramel, chocolate and raspberry sauces garnish a 12” plate using zig zag pattern.
  2. Next put a dollop of whipped cream in the center of the plate and set the almond lace shell in the center of the plate using the whipped cream to support the shell.
  3. Place 3 scoops of the vanilla in the shell.
  4. Cut the banana lengthwise and lay on a sheet pan.
  5. Sprinkle sugar over the banana to coat. Use a torch to caramelize the sugar and allow banana to cool. Sugar will be hot.
  6. Once cooled enough to handle, place bananas on top of the ice cream with caramelized part of the banana facing upward.
  7. Top with whipped cream and garnish chocolate sauce and maraschino cherry.
  8. Last sprinkle chopped hazelnuts and cut strawberries on the plate.
