Bulk Dessert: Truffles

Ingredients:

  • 1 cup coconut
  • 1 1/2 cups raw walnuts, soaked overnight and drained
  • 1/4 teaspoon sea salt
  • 1/2 pound pitted dates
  • 1/2 cup unsweetened cocoa powder

At Home

  • 1 teaspoon vanilla extract

Directions:

  1. Combine walnuts and salt in food processor. Process until finely ground. Add dates, cocoa powder and vanilla. Process until mixture binds.
  2. Using 1-ounce ice cream scoop, scoop individual truffles and roll them in toasted coconut.
