Buffalo Mac & Cheese

Cook ¾ lb. your favorite shape pasta ( my favorites - fusilli or penne) and set aside
  • 1 small onion
  • ½ c. shredded carrots
  • 1 celery stalk
  • 2 Tbsp. butter

Sauté ingredients on medium heat

Add 2 Tbsp. flour and stir to make a paste

Add slowly while stirring:

  • ¼ c.    dry white wine
  • 2   c.    milk

Cook and stir on medium heat until thick and bubbly

  • Add:
  • 1  tbsp     parsley
  • ½ tsp     dry mustard
  • 1 tsp        salt
  • ½ tsp     pepper
  • 2   c.    havarti cheese - creamy
  • ½ c.    gorgonzola or crumbly blue cheese
  • ¼ c.    cayenne pepper sauce
  • 2   c.    cooked shredded chicken

Combine cooked pasta and cheesy sauce in a 2 qt. casserole dish and bake covered at 350 degrees for 25 minutes
