Bruschetta
Ingredients

10 Roma tomatoes, chopped

10 leaves fresh basil, rolled up and coarsely chopped

10 cloves garlic, minced

1/2 cup grated Parmesan

4 tablespoons olive oil

1/2 teaspoon salt

Freshly ground pepper to taste

1 baguette
Method

Preheat the oven or taster oven to 350 degrees F.

Mix the tomatoes, basil, garlic, Parmesan, oil, salt and pepper in a large bowl.

Put in the fridge for 10 to 30 minutes. The longer you can wait, the tastier it will be.

Cut the baguette into 1/2 inch slices and toast them on a baking sheet until they're a little crispy, so they can soak up all the juices of the tomato sauce without getting too soggy.

Arrange the toasted baguette slices on a plate and spoon some of the tomato mixture onto each one. Pile it high and eat carefully.
Serves 5-10 depending on how many slices you get out of the baguette.
