Brown Rice with Chickpeas, Feta & Spinach

Ingredients:

  • 2 packets frozen, pre-cooked white rice (this is 4 cups of rice)
  • *You can purchase frozen brown rice & also make your own ahead of time & freeze it in baggies.
  • 1 (15 ounce) can of chickpeas, drained & rinsed
  • 3/4 cup crumbled feta cheese
  • 2 cups baby spinach
  • a few pours of olive oil
  • garlic salt
  • black pepper
  • fresh or dried chopped parsley

Directions:

  1. Heat the rice for a few minutes.
  2. Toss with the chickpeas, feta, spinach & olive oil.
  3. Season to taste with garlic salt & pepper.
  4. Top with some parsley.
