Blue Cheese Dip

MAKES 21⁄4 CUPS
PREP TIME: 5 MINUTES

Ingredients:

  • 2 cups cottage cheese
  • 4 ounces blue cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons minced fresh chives
  • kosher salt and freshly ground black pepper

Directions:

  1. In the bowl of a food processor or in a blender, combine the cottage cheese, blue cheese, garlic and lemon juice. Puree until the dip is quite smooth.
  2. Add the chives and pulse until just combined. Season with salt and pepper. Transfer the dip to a serving bowl and serve immediately, or cover with plastic wrap and refrigerate until needed.
