Black Tiger Prawns & Diver Scallop Skewers

Ingredients
  • 15 pc prawns
  • 15 pc diver scallops
  • 15 pc bay leaves
  • 5 ea metal skewers

Chili Orange Marinade

  • 3 ea red chili
  • 6 ea whole oranges
  • 3 T honey
  • 3 T teriyaki sauce
  • ½ C sunflower oil
  • salt & coarse black pepper to taste

Brandy & Apricot Jam Basting Sauce

  • 1 lb smooth apricot jam
  • 1 ¼ c brandy
Directions
  1. Clean scallops by pulling the side mussel off and place scallop aside.
  2. Split open prawns and remove the vein.
  3. Then thread a scallop, bay leaf, and prawn onto the skewer. Placing about three on each skewer. (MAKE SURE THE SKEWER GOES THEOUGH THE HEAD OF THE PRAWN).
  4. Marinate the skewers for 4-6 hours.
For the Marinade
  1. Split chili in half and remove the seeds, and slice thinly width ways.
  2. Zest and juice the oranges and add this to the chili. Then add the other ingredients and mix. Then Add salt and pepper to taste.
  3. For the basting jam
  4. Mix together the ingredients together. For a more fiery taste, and extra chili can be finely diced and added to the basting sauce.
