Beer Braised Red Cabbage with Caramelized Honey Crisp Apples and Sweet Red Onion

Ingredients:

  • 2 tbl olive oil
  • 2 tbl unsalted butter
  • 2 Honey Crisp apples (cored, sliced and quartered)
  • 1 lg red onion, sliced
  • 1 head red cabbage, quartered and sliced
  • 1/2 C apple cider vinegar
  • 3 tbl sugar
  • 3 bottles beer (avoid dark stouts as they can turn bitter during the cooking process)
  • salt and pepper (to taste)

Directions:

  1. Heat 2 tbl each butter and olive oil in large stock pot over med-high heat
  2. Add apples and red onion, caramelize for 4-6 min.
  3. Add chopped and sliced red cabbage
  4. Combine apple cider vinegar, sugar and beer in stock pot, mix well and simmer for 60-90 minutes.
  5. Add salt and pepper to taste prior to service
  6. Strain off liquid per serving
