Beer Braised Bratwurst with German Honey-Mustard Reduction and Caramelized Onions

Ingredients:

  • 8 bratwurst
  • 8 Pretzel bratwurst buns
  • 2 bottles beer (avoid dark stouts as they turn bitter during the cooking process)
  • 1 Honey Crisp apple (cored, sliced and quartered)
  • 2 lg Vidalia onions
  • 2 tbl sugar
  • 1/4 C Dusseldorf (or German) mustard
  • 2 tbl honey
  • 2 tbl unsalted butter

Directions:

  1. Combine beer, apples, onion and sugar in medium size pot, mix well
  2. Nestle brats in pot (marinade) and simmer for 30 minutes, cooking to 165 degrees
  3. Remove brats from marinade (save liquid)
  4. Preheat grill to med-high and sear brats (remember brats are already cooked through)
  5. Strain and reduce marinade in a small pot over med-high heat (liquid should coat spoon)
  6. Mix marinade reduction in small bowl with German mustard and honey, reserve
  7. Heat butter in skillet over med. heat, add sliced onion and cook until golden (15-20 min.)
  8. Grill pretzel buns until heated through 
  9. Place brats inside grilled buns, top with German mustard reduction and caramelized onions
