Bacon-Wrapped Matzo Balls

Ingredients:

  • 18 eggs
  • 5 cups matzo meal
  • 3/4 cup of sparkling water
  • 3/4 cup of lard
  • 1 1/2 tablespoons of baking powder
  • 5 tablespoons of salt
  • A handfull of dill
     

Directions:

  1. Blend eggs, dill, water, melted lard, baking powder and salt for 5 seconds, then mix in bowl with matzo meal.

  2. Allow to sit in refrigerator for 30 minutes, then roll small balls and add to boiling water.

  3. Then wrap in a half-slice of applewood-smoked bacon.

  4. Roast in oven at 400 degrees until crispy.

  5. Serve with shaved fresh horseradish and mayonnaise.
