Baby Arugula Salad

Salad Ingredients
  • 4 cup Baby Arugula
  • 2 Avocados, peeled and sliced
  • 2 cup Hearts of Palm
  • 1 cup Cherry Tomatoes, sliced
  • To taste Salt and Fresh Ground Pepper
  • ½ cup Cilantro Vinaigrette (see recipe below)
Directions:
  1. Place avocados, hearts of palm, and cherry tomatoes on a serving platter.
  2. Season to taste with salt and fresh ground pepper.
  3. Place arugula on top and drizzle with cilantro vinaigrette. Serve immediately.

Cilantro Vinaigrette

Ingredients:
  • ¼ cup Cilantro, chopped
  • ¼ cup Lemon Juice
  • 1 ½ cup Extra Virgin Olive Oil
  • To taste Salt and Fresh Ground Pepper

Directions:

  1. Place the first three ingredients in a blender on medium-high speed until fully blended.
  2. Season with salt and fresh ground pepper to taste and store in an airtight container in the refrigerator.

Serves 2 as an entrée or 4 as an appetizer
