Asian Chicken Salad

Ingredients:
  • 2 cups chopped roasted boneless, skinless chicken breast
  • 1 cup chopped steamed and cooled asparagus or broccoli
  • ½ cup diced red bell pepper
  • 1/3 cup extra-virgin olive oil
  • ¼ cup raw apple cider vinegar
  • 1 teaspoon white sesame seeds
  • 2 tablespoons honey
  • 2 teaspoons tamari
  • ½ cup chopped scallion
  • 2 teaspoons chia seeds
  • 2 teaspoons black sesame seeds
Directions:
  1. Combine the chicken and vegetables in a large bowl.
  2. Put olive oil, vinegar, white sesame seeds, honey, and tamari in a jar and shake to emulsify.
  3. Drizzle the dressing over the chopped chicken mixture and sprinkle with the scallions, chia seeds, and black sesame seeds. Serve over mixed greens.
