Apple, Orange and Parsley Salad

This wonderful fall salad features fruity elements such as apples and oranges as well as savory components such as fennel seeds and Parmesan.

Serves 4

Ingredients:
  • 4 apples julienned
  • 2 oranges segmented
  • 1/2 cup whole parsley leaves
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1/2 Teaspoon of crushed fennel seeds
  • 2 oz shaved Parmesan cheese
  • Salt & pepper to taste 
Directions:
  1. Combine all the ingredients in a bowl & Toss to combine. Plate on a large platter and top with Parmesan cheese.
