Apple Cinnamon Schnapps With Apple Parfaits

Apple Cinnamon Schnapps

Ingredients:

  • Hollow carved apples (1 per person)
  • 2 parts Apple Cider
  • ½ jigger Cinnamon Vodka
  • Splash of Apple Schnapps
  •  Cinnamon Stick for garnish

Directions:

  1. Core and carve whole apples creating a cup like vessel.
  2. Mix warm or room temperature apple cider with cinnamon vodka and apple schnapps .
  3. Pour into apple cups and garnish with a cinnamon stick.

 

Apple Pie Parfaits

To make the parfaits, you will first want to make the apple pie filling; it needs 30 minutes to set. Then make the cinnamon rugelach crumble, and lastly the cinnamon scented whipped cream. Then you will assemble all the ingredients in parfait glasses.

Supplies needed:

  • Parfait Glasses
  • Piping bag for whipped cream
  • Food processor
  • Stand mixer

Apple Pie Filling (make 1st)

Ingredients:

  • 4 ½ cup chopped apples
  • 1 Tbsp. lemon juice
  • 1/2 c. brown sugar
  • 1/2 c. sugar
  • 1/4 c. cornstarch
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 2 c. water

Directions:

  1. Combine the sugar, cornstarch, cinnamon, nutmeg & salt in a saucepan. Add the water. Bring to a boil and boil for 2 minutes. Add the apples. Bring back to a boil. Reduce the heat and simmer for 8-10 minutes. Set aside in a bowl and cool at least 30 minutes.

Cinnamon Rugelach Crumble:

Ingredients:

  • 2 Dozen Store Bought "Day Old" Rugelach Cookies (Stale cookies are better to make a crumble)
  • 1 Stick of Softened Butter
  • 2 oz. Cinnamon Sugar

Directions:

  1. In a food processor, pulse the cookies until they are broken down into large crumbles. Add the softened butter and pulse until incorporated, and then add the cinnamon sugar and pulse until a crumble consistency is formed. Set Aside.

Cinnamon Scented Whipped Cream

Ingredients:

  • 2 cup(s) Heavy Cream, cold
  • 3/4 cup(s) Confectioners' Sugar
  • 1 teaspoon(s) Ground Cinnamon
  • 1/2 teaspoon(s) Vanilla Extract

Directions:

  1. In a large bowl, using a mixer set on medium-high speed, beat the cream, sugar, cinnamon, and vanilla until stiff peaks form. Do not overbeat.

To make the parfaits:

  1. Spoon crumble into the bottom of the glass, and then layer with apple pie filling, and pipe whipped cream, then sprinkle with crumble, add apple pie, and pipe whipped cream, making 2 layers. Finish with crumble on top. Serve!
