Grilled Summer Kebobs with Farmer’s Market Veggies and Chicken

Ingredients:
  • 1 ½ pound boneless, skinless chicken (preferably organic and local) and cut into 1” pieces
  • 2 tbsp of fresh, chopped oregano
  • 1 tsp of ground cumin
  • 1 tsp of salt
  • ¼ tsp of garlic powder
  • 1/8 tsp of cayenne pepper (optional)
  • ½ lb of summer squash or zucchini, cut into 1 inch cubes
  • ½ lb of sweet red pepper, cut into 1 inch cubes
  • 1 pint of cherry tomatoes
  • 2 tbsp of extra virgin olive oil
  • 1 package of wooden skewers
Directions:
  1. Soak skewers in water overnight
  2. Heat grill and mix the oregano, cumin, salt and cayenne pepper together in a small bowl
  3. Thread chicken onto the kebob sticks, alternating with the squash, red pepper and cherry tomato
  4. Brush the kebobs lightly with olive oil and sprinkle on seasoning
  5. Grill turning occasionally until cooked (10-15 minutes)
