Candied Pecans

PREP TIME: 5 MINUTES

Ingredients:
  • 1 egg white
  • 1 teaspoon plus
  • a pinch of kosher salt
  • 2 cups pecans
  • 1 cup sugar
  • 1⁄2 teaspoon cinnamon
  • 1⁄8 teaspoon cayenne pepper
     

Directions:

  1. First make the candied pecans: Preheat the oven to 350°F. Prepare a sheet pan with a silpat liner or parchment paper.
  2. In a medium bowl, whisk the egg white with a pinch of salt until frothy and pale. Add the nuts and gently toss to coat. Add 1⁄2 cup of the sugar and toss. Add the remaining 1⁄2 cup sugar, 1 teaspoon salt and the cinnamon and cayenne pepper. Toss to coat and spread the nuts on the prepared sheet pan. Bake for 10 minutes.
  3. Remove the nuts from the oven and stir them around with a spatula. Bake for an additional 5 minutes.
  4. Remove the nuts from the oven, stir them once more and let cool. Store in an airtight container in the pantry for up to 2 months, or until ready to use.
