Casa Vega Grilled Shrimp with Spinach

Grilled Shrimp Ingredients:

  • 8 Bamboo sticks
  • 1 lb large shrimp- clean, peeled, deveined
  • 1 tsp lime zest
  • Juice from 2 limes
  • 1 jalapeno, seeded and minced
  • 2 tbsp soy sauce
  • 2 garlic cloves, minced
  • 3 tbsp olive oil
  • 2 tbsp cilantro, chopped
Directions:
  1. Pre-heat grill or grill pan
  2. Soak bamboo sticks in bowl of water
  3. In a large mixing bowl, combine the lime zest, lime juice, jalapeno, soy sauce, garlic, olive oil and cilantro
  4. Add shrimp to the marinade and refrigerate for 15-20 minutes. **** Do not leave the shrimp marinating longer because the lime juice with cook the shrimp.
  5. Remove bamboo sticks from water and using 2 sticks place 6 shrimp on each set of skewers
  6. Cook on grill for 2-3 per side.
  7. Place the cooked shrimp on bed of sautéed spinach
  8. Garnish with pico de gallo (optional)

Sautéed Spinach Ingredients:

 

  • 1 1/4c fresh spinach
  • 1 tbsp chopped onions
  • 1 tbsp sliced mushrooms
  • 1 tsp garlic, minced
  • 1 tbsp olive oil
  • salt and pepper to taste

Directions:

  1. In a large frying pan, heat the oil.
  2. Add onion, mushrooms and garlic
  3. Add in spinach and cook until it turns dark green.
