Sandro’s Mixed Berries with Balsamic Vinegar and Grand Marnier

Makes 6-8 servings

Ingredients:

  • 4 heaping tablespoons plus ½ cup sugar
  • Peel of 1 orange, all white pith removed, cut into 12 pieces
  • ½ cup orange juice
  • 1 tablespoon balsamic vinegar
  • 2 pints blueberries
  • 2 pints strawberries, hulled and quartered
  • 2 tablespoons Grand Marnier

Directions:

  1. Place 4 heaping tablespoons of sugar and 3 tablespoons water in a sauté pan and cook over high heat until caramelized.
  2. Add the orange peel, orange juice, and balsamic vinegar.
  3. Cook 1 minute, strain, and discard orange peel.
  4. Heat a separate large sauté pan over very high heat.
  5. Mix berries and ½ cup sugar and add to hot pan.
  6. Add caramelized sugar mixture and cook 1 to 2 minutes.
  7. Add Grand Marnier and remove from heat.
  8. The sauce can be refrigerated for months.
