Crab and Shrimp salad on Toast, Watercress and Radish Salad

Ingredients For the Crab & Shrimp Salad:
  • ½ pound cooked crabmeat *
  • ½ pound cooked, peeled and deveined shrimp*-chopped.
  • ½ cup mayonnaise
  • 2 tablespoon mascarpone
  • 2 tablespoon chopped chives
  • 1 tablespoon chopped tarragon
  • 1 tablespoon chopped flat leaf parsley
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Splash of Tabasco
  • Salt and pepper
  • 2 sliced (inch thick) of white crusty bread
  • 1 tablespoon butter.
  • 1 bunch watercress
  • 2 red radish-finely sliced
  • 1 lemon.
Directions For the Crab & Shrimp Salad:
  1. In a large mixing bowl place crabmeat and chopped shrimp.
  2. Add mayonnaise and mascarpone and combine with the crab and shrimp meat.
  3. Once mixed add the chives, tarragon, parsley, lemon zest and Tabasco season with salt and pepper and the juice of one lemon.
  4. Place in refrigerator
  5. In a medium sized sauté pan add butter
  6. Once melted place the bread in the pan and cook on low heat until golden brown and both sides.
  7. Remove from heat, place on kitchen paper to remove any excess butter.
  8. Place the bread on two plates
  9. With a spoon spread the crab salad onto each piece of bread.
  10. Finish the plate with watercress lightly dressed in Olive Oil, radish slices and a wedge of lemon.
  11. *For this recipe you can use pasteurized crabmeat
  12. *Feel free to use pre cooked shrimp from fishmonger or seafood counter at you local supermarket.
