Mrs. Marple’s Maple Meltaways

These delicate melt-in-your mouth cookies have a luscious “peanut buttery” taste without the peanuts.

Instructions:

  • Yield-about 30 cookies
  • 2 cups oat flour
  • 1 teaspoon baking powder
  • 1 cup pure maple syrup
  • 1 cup toasted sunflower seed butter
  • 1/3 cup sunflower oil
  • 1 tablespoon vanilla extract

Directions:

  1. Preheat oven to 350 F. Lightly oil a cookie sheet and set aside.
  2. Comine the flour and baking powder in a medium bowl and set aside.
  3. Place the maple syrup, sunflower butter, oil, and vanilla in a large mixing bowl and stir until well blended.
  4. Add the flour mixture to the maple mixture and stir to form a thick, sticky, batter-like dough.
  5. Drop rounded tablespoons of dough about 2 inches apart on the prepared cookie sheet.
  6. Bake for 10-12 minutes or until lightly browned.
  7. Cool the cookies a few minutes before removing from the cookie sheet. Serve warm or at room temperature.

Change It Up-

For crunch aprinkle the cookies with raw sunflower seeds before baking.

Use sesame seed butter instead of sunflower seed butter.
