Watermelon Salad

This is delicious and refreshing to serve as a side dish with chicken or shrimp.
Makes 4 servings

Ingredients:

  • 4 cups watermelon chunks, seeds removed
  • 1 cup crumbled feta cheese
  • 2 tablespoons chopped fresh mint
  • Salt and freshly ground pepper to taste
  • 2 tablespoons good balsamic vinegar

Directions:

  1. Combine all the ingredients in a large salad bowl and toss well. Refrigerate until ready to serve.
