Lemon Oregano Mediterranean Dip

Lemon Oregano Mediterranean Dip

  • 1 cup low fat cottage cheese
  • Juice of one lemon
  • Zest of one lemon
  • 1/2 cup flat leaf parsley
  • 1 tbsp. oregano, fresh
  • 1 cloves garlic, minced
  • 2 tbsp. extra virgin olive oil
  • 2 large cucumbers, peeled and cut into sticks
  • Salt and pepper
     

 
Dip
In a food processor, combine cottage cheese, garlic, parsley, oregano, lemon juice, lemon zest, and olive oil. Puree until smooth. Season with salt and pepper and serve with cucumber sticks or PopChips.
 
Makes approximately 4 servings.  Serving size: ∏ cup of dip
