Edam and Sage Scalloped Potatoes

Ingredients
  • 1 Tablespoon olive oil
  • 2 onions, thinly sliced
  • 1/2 cup low fat milk
  • 1/2 cup low-sodium vegetable broth
  • 1/2 cup reduced fat sour cream
  • 1 cup low fat cream cheese
  • 1 Tablespoon whole wheat flour
  • 1 Tablespoon fresh parsley, chopped
  • 1 teaspoon ground sage
  • 1 cup Edam cheese, shredded
  • 2 lbs. potatoes, thinly sliced
  • Salt and pepper to taste
  • 1/2 cup Edam cheese, shredded
Method
  1. Preheat oven to 350 degrees.
  2. Grease 9 x 13" baking dish with olive oil.
  3. Heat oil in a skillet over medium high heat. Saute onion until soft -- about 4 minutes. Set aside.
  4. In large bowl whisk the next 7 ingredients together (milk through sage).
  5. Stir in onions and cheese. Mix well. Season to taste with salt and pepper.
  6. Spread 1/4 cup of cheese mixture in the bottom of the baking pan. Top with half of the potatoes. Repeat layering ending with cheese mixture on top.
  7. Sprinkle with remaining 1/2 cup cheese.
  8. Bake 50 minutes covered. Remove cover and bake 10 more minutes.
  9. Enjoy!
