Oinking Fried Chicken

Ingredients:

  • 1 3 lb chicken
  • 2 cups buttermilk
  • 3 cups AP flour
  • 1 cup wonder flour
  • 2 tbsp paprika
  • 2 tsp chip powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp ground black pepper
  • 2 tsp old bay seasoning
  • 1 cup tempura flour
  • 3 1/4 cup seltzer water
  • 3/4 lb prosciutto
  • ½ tsp celery salt
  • 1 qt vegetable oil
  • 1 cup panko bread crumbs
  •  sea salt

Directions:

Method for Chicken

  1. Break down chicken into 8 pieces (2 breasts, 2 thighs, 2 legs, 2 wings).
  2. Combine all dried spices.
  3. Mix buttermilk with half the amount of spices. Add chicken and marinate for 12 hours.
  4. Remaining spices get mixed with the AP flour and the wonder flour (reserve).

Method for Prosciutto

  1. Add 2 cups of oil to deep pot, heat 350 degrees.
  2. Fry prosciutto until crispy. Remove and drain excess oil off of prosciutto.
  3. Pulverize the prosciutto in food processor. Add panko bread crumbs then pulse 4 times. Reserve.
  4. Lower temperature of oil to 290 degrees.

Method for Coating

  1. Whisk tempura flour while combining with the seltzer water.

Method for Frying

  1. Remove chicken from buttermilk. Shake off excess buttermilk.
  2. Dredge chicken in AP flour and wonder flour mixture.
  3. Shake off excess flour, dip chicken into tempura batter. Shake off excess batter.
  4. Add chicken to the prosciutto panko mixture making sure total surface area of chicken is covered.
  5. Gently place into 290 degree oil, allow frying for 12 minutes.
  6. Remove after 12 minutes onto a perforated rack. Season with sea salt.
  7. Allow chicken to rest for two minutes. Serve.
