Serves 10

Ingredients:

  • 1 cup unsweetened shredded coconut
  • 1 cup whole milk
  • 1 cup superfine sugar
  • 1 cup self-rising flour

Directions:

  1. Preheat oven to 350F. Line a 9 x 5 inch loaf pan with parchment paper.
  2. In a large bowl, stir together all the ingredients until well combined.
  3. Pour the batter into the pan and bake until a wooden skewer inserted into the center comes out clean, 40 to 45 minutes.
