Sage, Sausage and Mushroom Bruschetta

Try this easy appetizer at your Thanksgiving dinner!
Ingredients
Sage, Sausage and Mushroom Bruschetta

1/2 pound Jimmy Dean Fresh Roll Sausage, sage flavor; browned, drained and chopped

4 strips bacon, browned and crumbled

1 medium baguette, sliced into 15-1/4 inch thick pieces and toasted

8 ounces of goat cheese, softened

1/4 cup white mushrooms, cleaned and chopped

1 cup chopped yellow onion

10 ounces frozen chopped spinach, thawed and drained

2 teaspoons garlic, minced

2 tablespoons heavy cream

Olive oil

Salt

Pepper

Method

1. Spread thin layer of goat cheese on each slice of toasted baguette.

2. In a medium skillet heat 2 teaspoons of olive oil. Add garlic and onions. Saute until tender, approximately 5 minutes.

3. Add mushroom stems and cook 3 more minutes.

4. Stir in spinach, bacon and cream. Season with salt and pepper and remove from heat.

5. Top baguette slice with heaping tablespoon of sausage mushroom mixture.

6. Transfer to serving tray and place a micro sage leaf on top of each slice. Serve warm.

Garnish (optional): 15 micro sage leaves

Makes 15 pieces
