Live Pasta
Ingredients
2 zucchini squash, spiralized or julienne
2 yellow squash, spiralized or julienne
3 tbsp. extra virgin olive oil
1 cup tomatoes, diced
5 sun-dried tomatoes, soaked in water for 30 minutes, then sliced
1/2 small shallot, chopped
1 small clove garlic, chopped
1 tbsp. chopped fresh basil
1 tsp. chopped fresh oregano
Sea salt, to taste
Ground pepper, to taste
Method
1. Put zucchini and squash in a large mixing bowl. Sprinkle with salt and pepper and toss with 2 tablespoons of olive oil. Add tomatoes, sun-dried tomatoes, shallot, garlic, basil and oregano. Add remaining tablespoon of olive oil and toss once more lightly to combine.
2. Serve immediately. May be served on bed of spinach and arugula and topped with pine nuts and olives.
