Homemade Tomato Sauce
Top off your next pasta dinner with this tasty homemade tomato sauce.
Ingredients
10 plum tomatoes
1 large pot boiling water
Salt
1 stalk celery
4 tbsp. extra virgin olive oil
1 onion, coarsely chopped
3 cloves of garlic
1 medium carrot, chopped
Handful of fresh basil
Freshly grated ricotta salata cheese
Any pasta made according to package directions
Method
1. When water boils add tomatoes and when tomato skins begin blistering, remove and drain well. Roughly chop tomatoes.
2. In a saucepan, add extra virgin olive oil, onion, garlic, carrot and celery. Add a pinch of salt. Cook until translucent.
3. Add tomatoes and cook for approximately 15 minutes until all flavors are combined and excess water has evaporated.
4. Toss with fresh pasta and top with freshly-grated cheese and basil.
