Ceviche de Atun y Camarones
Ingredients for Ceviche
4 pieces of shrimp, poached
2.5 oz. of tuna, diced into 1/4 inch pieces
1.5 oz. of Chipotle Marinade -- see below for ingredients and preparation
Salt to taste
1-1/2 tsp. of parsley, chopped
1 tsp. of mint, chopped
3 tsp. of scallions, chopped
2 tbsp. of tomato, diced into 1/4 inch pieces
Ingredients for Chipotle Marinade
1 orange, fresh squeezed
1 lime, fresh squeezed
1 oz. of chipotle in adobo, pureed
1/2 oz. of white vinegar
1 tsp. of kosher salt
1 tsp. of white granulated sugar
Method for Chipotle Marinade
1. Juice oranges and limes.
2. Puree chipotle in blender until smooth.
3. In a bowl, combine all ingredients and mix well.
4. Check seasoning and strain, reserve.
Method for Ceviche
1. In a bowl, combine tuna, shrimp and chipotle marinade together. Toss well and season with salt.
2. Add parsley, mint, scallions and tomatoes and mix until all is coated and seasoned well with the marinade.
3. Plate and serve with tortilla chips or warm tortillas, garnish with mint and parsley.
