Apple Crunch Pupcakes
Ingredients for Pupcakes
4 cups barley flour (like Bob's Red Mill)
1 tbsp. baking powder
1/4 tsp. vanilla
4 tbsp. honey
2-3/4 cups water
1/4 cup applesauce, unsweetened
1 egg beaten slightly
1 cup fresh chopped apple
Ingredients for Cinnamon Cream Cheese Frosting
1-8 oz. pkg low-fat cream cheese
1 tbsp. honey
1/2 tsp. cinnamon
Method
1. Preheat oven to 350 degrees. Spray muffin tin with nonstick spray.
2. Mix all wet ingredients thoroughly. Combine dry ingredients in separate bowl. Add wet to dry slowly, scraping well to make sure no dry mixture is left. Pour into muffin tins.
3. Bake for 1-1/4 hours or until a toothpick inserted into center come out dry. Store in a sealed container in the refrigerator.
4. Frost if desired with Cinnamon Cream Cheese Frosting.
Makes 12-14 pupcakes.
